CHOCOLATE HISTORY PROCESS

Cocoa, initially produced by the Aztecs, was introduced to Europe as a beverage by Spanish sailors in the 15th century. Its popularity surged in the 19th century with the transformation into chocolate, incorporating milk and sugar. The rich history of chocolate is based on approximately 3000 years.

Chocolate, in its modern form, originated in the 19th century, with the first production occurring in England in 1876. Derived from the seeds of the cocoa tree, chocolate is a nutrient-rich, energy-providing food.

SUMMARIZE THE PRODUCTION PROCESS

Cocoa beans are obtained and subjected to a washing process to remove foreign matter. Some ingredients are used for cocoa butter production. The cleaned beans are roasted in an oven. Afterward, the rolling process, commonly known as tossing, initiates. Within this stage, the outer shell separates from the edible tips, and the roasted beans undergo crushing between rollers, with air used to separate them from each other. Cocoa butter is acquired through hydraulic pressing of the cocoa solution. This cocoa butter is utilized in chocolate production, and the pressed cake is pulverized to create cocoa powder. The final products are packaged and made available for sale.
